Ingredients: 1 & 1/2 cup sugar 2 cups all purpose flour 2/3 teaspoon salt 1 teaspoon baking powder 1/2 teaspoon baking soda 1 & 1/3 cup oil 5 eggs 1 teaspoon vanilla flavoring (for strawberry layers) 1 teaspoon lemon flavoring (for lime layers) Cream Cheese Frosting 2 X 8 ounces cream cheese, softened 1/2 cup butter, softened 1 cup chopped pecans, optional 1 box powdered sugar 1 teaspoon vanilla 3 ounces lime gelatin mix for 1/2 batter 3 ounces strawberry gelatin mix for 1/2 batter 3/4 cups key lime juice for 1/2 batter 3/4 cup strawberry syrup for 1/2 batter

Directions:Preheat oven to 350º. Place dry ingredients (except for dry gelatins) in a mixing bowl and blend well. Add oil and blend. Add eggs one at a time and blend well. Divide batter into 2 equal portions. To one portion, add 3/4 cup key lime juice, 1 teaspoon lemon extract and dry key lime gelatin and blend well. (should be 1 or 2 layers). To the other portion, add 3/4 cup strawberry syrup, 1 teaspoon vanilla flavoring and dry strawberry gelatin and mix well. (Should be 1 or 2 layers). Bake layers at 350º approximately 30 minutes. Frost with cream cheese frosting. Frosting: combine cream cheese and butter until fluffy. Gradually add powdered sugar. Add remaining ingredients, beating until spreading consistency. Frost cooled cake layers. |
