2 c. rolled oats
2-3 c. mango and orange juice
2 granny smith apples, grated
1 c. natural yogurt
1 tsp. vanilla
1 1/4 c. sliced almonds
2/3 c. sunflower seeds
2/3 c. pumpkin seeds (pepitas)
1 tsp. cinnamon, ground

Soak oats, nuts and seeds in mango and orange juice. Grate in the 2 apples. The oats should have just a little of the juice appearing around the edges of the bowl. If it looks a little dry add some more juice. Cover and leave to soak overnight in the refrigerator. The next day stir in cinnamon and yogurt. To serve add your favorite fruit such as banana, strawberries or mixed berries and drizzle with honey. This keeps in the refrigerator for up to 1 week. Stir well before serving.
