2 cups giblets; can substitute chicken or turkey meat; 2 cups diced celery; 4 cups diced onion (to taste); 6 cups rice (cooked); 20 slices diced bread (chopped); 6 eggs, chicken broth.

Directions:
Directions:
Saute cooked giblets, celery and onions. I use olive oil or butter; am sure Mother used lard. Gradually combine cooked rice, bread and eggs to celery, giblet and onion mixture. Add chicken broth if desired to make it moist. Place in oblong glass pan; be sure to spray with Pam; bake at 350 degrees for one hour.
