3 slices bacon, diced
1 small onion, chopped
1 cup uncooked long grain rice
2 cans (14.5 oz.) cut okra and tomatoes
1 cup diced cooked ham
1 cup tomato juice
Salt & Pepper to taste

Preheat oven to 350º oven. Fry bacon in medium skillet over medium-high heat 5 minutes. Remove with slotted spoon; set aside on paper towel to drain. Add onion and rice to bacon drippings in skillet. Cook 5 to 10 minutes until rice is transparent but not browned. Spoon onion, rice and bacon drippings into a 3 quart casserole dish. Add okra and tomatoes, ham, tomato juice, cooked bacon, salt, and pepper. Cover and bake 30 minutes until liquid is absorbed. Remove from oven and fluff with fork.
