Ingredients:  
2 1/2 - 3 cups cubed cooked chicken breasts
2 cups cooked Chinese style almond rice
1 cup finely chopped onions
1 cup finely chopped green peppers
1/3 cup pimentos
1 can cream of chicken soup
1/2 cup mayonnaise
Salt & Pepper, to taste
1 tbsp. chopped parsley
"TOPPING"
1 cup grated jack cheese
1 cup French fried onion rings

Directions:
Directions:
Combine ingredients in a buttered 2 quart casserole.
Put on top the "TOPPING".
Cover with foil and bake for about 30 minutes in a 375º oven.
The last 10 minutes remove the foil and let the casserole topping get crispy.
