1 1/2 cups carrots, boil until tender (20 mins), drain and chop
1 lb. collard greens, boil 30 mins until tender, drain and chop
3 TBL olive oil
1 medium onion, chopped
3 garlic cloves, chopped
3 celery ribs, chopped
1 large red pepper, diced
(2) 15 oz. cans black beans, drained
2 tsp chipotle chile powder (or regular)
1 1/2 tsp smoked paprika
1/4 tsp salt
2 tsp cumin
2 tsp coriander
1 1/2 chicken broth

In large stockpot on medium heat add olive oil, vegetables.
Add black beans, drained greens and carrots, salt and spices. Stir to combine. Add broth. Cover and simmer 15 - 20 mins. Taste, and add additional amount of spices above if needed.

Serve hot or cold for salad....or add to pasta dish.
