4 c. shortening
4 c. sugar
4 c. packed brown sugar

8 c. flour
8 c. quick oats
4 tsp. baking soda
2 tsp. salt

2-12 oz. bags of chocolate, peanut butter, or butterscotch chips, or candies (or any combination/flavor)

2 cups chopped nuts (optional)
1-2 cups coconut (optional)

For cookies:
6 c. mix
2 eggs
1 tsp. vanilla

Directions:

Cream together first 3 ingredients until well blended. Combine dry ingredients in separate bowl and mix well.
Add chips, nuts, and coconut. Store in airtight container (about 6 wks. in pantry, or a few wks. longer in the fridge). If desired, you can add the chips, nuts and coconut when you make the dough and not put them in the cookie mix.

To make cookies:
Stir together eggs and vanilla. Add cookie mix and blend well. Drop onto cookie sheet. Bake at 350º
for 8-10 min. until light brown or desired crispness.

Depends on size of cookies. One batch of dough using 6 cups mix will make about 5 doz.

I have many fond memories of days spent with my grandma in her kitchen. I gave her this recipe for cookies and she turned it into a cookie mix recipe! These are the cookies she would usually mail to her grandchildren serving missions. This mix keeps well and is handy to have around whenever a cookie craving hits!
