Ingredients: 1 (6 pound) boneless pork shoulder or butt roast (not tied)
1 cup Roasted Garlic Rub
ROASTED GARLIC RUB:
2 cups roasted minced garlic 5 Tbsp kosher salt 1/4 cup coriander seeds, toasted and ground 2 Tbsp mustard powder 4 Tbsp dried chipotle pepper, ground 2 Tbsp dried thyme 5 Tbsp dried rosemary, finely chopped 5 Tbsp lemon zest 2 1/2 tsp black pepper
combine all rub ingredients in a food processor until well combined

Directions:Preheat oven to 275º.
Spread Roasted Garlic Rub all over pork and inside any cavities, concentrating on the boned side.
Put pork, fat side up, in a roasting pan and roast in middle of oven 6 to 8 hours. Transfer roast to cutting board and let stand 15 minutes. Pull shreds apart with tongs into chunks. |
