4 boneless, skinless chicken breast halves

8 basil leaves

4 slices mozzarella cheese

4 slices cooked bacon

1 c. Italian bread crumbs

1/4 c. grated Parmesan cheese

2 egg whites

2 cloves garlic, minced

1/4 tsp. salt & pepper

Directions:
Directions:
Set rack on sheet pan and spray with non-stick cooking spray. Cut through the thicker side of each chicken breast to create a pocket. Press 2 basil leaves, slice of mozzarella and slice of bacon into each pocket.
Mix together bread crumbs, Parmesan cheese, minced garlic, salt and pepper. Beat egg whites until foamy. Dip chicken into egg whites and then into crumb mixture. Place onto rack and bake in 400º oven. Bake until done.
