2 large cans of spinach or you could use fresh, just boil down
1 lb Italian sausage (you can use hot)
4 eggs
garlic to taste
1/2 onion

Rice
Directions:
Directions:
Brown sausage, onion, garlic. Beat eggs and to meat mixture stir up add spinach.

Serve over rice.
