1 1/2 lbs. chicken thighs
1/2 cup dijon mustard
1/4 cup maple syrup
1 tbsp apple cider vinegar
salt and pepper to taste

Directions:
Directions:
Preheat oven to 450º. Mix the mustard, syrup, and cider vinegar in a bowl. Put chicken thighs in oven proof baking dish. Salt and pepper the thighs to taste. Coat the chicken with the mixture evenly on both sides. Put a small amount of the mixture aside for basting. Bake @ 450º for 40 minutes. Baste tops of chicken half way through.

This recipe originally called for rice wine vinegar, but I substituted the apple cider vinegar.
