3 tablespoons cornstarch
1 (10.5 ounce) can chicken broth
1 tablespoon vegetable oil
1 lb boneless, skinless chicken breast, cut into bite size pieces
1 (8 ounce) can pineapple chunks in juice
1/4 cup sugar
1/4 cup vinegar
1 green and red bell pepper, sliced

Directions:

1. Mix cornstarch and broth until smooth
2. Heat oil in a skillet. Brown chicken.
3. Add broth mixture and remaining ingredients
4. Cook and stir until mixture boils and thickens
5. Cover. Reduce heat. Simmer 5 minutes or until heated through. Serve over rice.
