5 lbs red potatoes boiled with jackets on
1/2 lb bacon chopped, fried, drained (reserve drippings in pan
1 large onion sliced thin (more to taste)
1 large green pepper chopped
water
salt and pepper to taste
sugar to sweeten to taste
cidar vinegar
tablespoon or so of flour

After cooling, peel and slice potatoes in large bowl
As drippings are still heating, add flour and stir fast. Needs to look like a heavy paste. Then add about 1/2 cup cidar vinegar, 1/2 cup water, stirring whole time to eliminate lumping. You may add more of vinegar or water as it starts to thicken. Add sugar to create a sweet sour taste. You just have to play with it till you reach taste you want. Add salt and pepper, and after all is thickened to a light syrup texture, add the onions and green pepper. Cook till those are soft. Add to potatoes, add bacon and mix.

This recipe was give to me by Grandma Huck and never had a measurement to it. It just takes a bit of tasting and practice.
