1 1/2 pounds fresh rhubarb
3/4 cup granulated sugar
2 tablespoons flour
1/4 teaspoon mace
1/8 teaspoon salt
1/4 cup water
1 egg, beaten
1/3 cup brown sugar
1/2 cup flower
1/4 cup butter
1/2 cup toasted almonds
Few drops red food coloring (optional)
Few drops lemon and a diced thin slice of lemon (optional)

Cut rhubarb into 3/4-inch pieces to make 5 cups. Mix granulated sugar, 2 tablespoons flour, mace and salt. Add food coloring and lemon, if you use either or both, to water. Add to rhubarb with sugar mixture and egg, toss gently. Turn into 8 or 9-inch square pan. Mix brown sugar, flour and butter to crumbly consistency; stir in almonds. Sprinkle over rhubarb mixture. Bake in 375-degree (moderately hot) oven, 30 minutes. Serve warm or cold with cream if desired.
