1/2 lb sliced bacon, cut crosswise into 1/2" pieces
1/2 c chopped onion
1/2 c chopped green pepper
3/4 c chopped celery, with tops
2 T flour
2 cans (1 lb each) red kidney beans, undrained
1/2 c thinly sliced pared carrot
1 bay leaf
1/4 tsp salt
1/8 tsp pepper
1/4 tsp dried thyme leaves
3 beef-bouillon cubes

In lg saucepan, over low heat, saute bacon until crisp. Drain, reserving 1/4 c drippings.

In reserved drippings, saute onion, green pepper, & celery about 5 min, or until tender.

Remove from heat. Stir in flour. Add kidney beans, carrot slices, parsley, bay leaf, salt, pepper, thyme leaves, bouillon cubes, & 3 c water.

Slowly bring to boiling, stirring occasionally. Reduce heat; simmer, covered, about 40 min, stirring several times.

Sprinkle bacon over top of chowder; heat several min longer.

Serve at once.
