1 can evaporated milk - put in freezer for 1 hour to get cold and slushy
1 small pkg lemon jells
1 small can crushed pineapple packed in water -- save water
1/2 c. sugar
2 T. lemon juice
1 tsp. vanilla
Graham Cracker Crust --
1 package graham crackers
1 cube butter
1/2 c. sugar

Graham Cracker Crust:
Crush 1 package graham crackers until fine (use rolling pin), put in bowl and add 1/2 c. sugar. Pour melted butter into mixture and combine thoroughly. Press into 9X13 pan forming a crust. Save a little extra to sprinkle on top on cheesecake.

Filling:
Dissolve lemon jello in 1 cup boiling water. Use reserved pineapple juice and add water to make 1 cup. Cool a bit. Whip evaporated milk till fluffy, add 1/2 c. sugar, 2 T lemon juice, and 1 t vanilla. Fold in crushed pineapple. Pour over graham cracker crust in 9X13 pan. Top with a sprinkle of graham crust crumbs. Chill.
