Ingredients: Almond crusted grouper (I have used cod and am sure any yummy white fish would be great) 4-8 ounce grouper filets Crust 1 cup sliced almonds 1 cup panko bread crumbs 1/4 cup parsley 1 tsp chili flakes Pinch of salt Flour 1 egg 1 cup milk Sauce 1/4 cup each diced peppers,diced red onion,diced celery,diced carrots,curry powder and EVO 2 sprigs of thyme and oregano 1 bay leaf 1/2 cup golden rum 1 cup coconut milk Water and cream to consistency Prepare crust: Place almonds ( save half of them for later), bread crumbs, parsley, chili and salt in food processor. Pulse for coarse texture. Mix in remaining almonds leaving whole. Mix egg milk and seasoning set aside. Sauce preparation Warm oil in pot. Add the peppers, celery, onions, carrots, and herbs. Simmer until soft. Then add curry powder. Cook one minute. Add rum and then reduce. Add coconut milk, and a little water and simmer one hour and remove from heat. Remove herbs, blend and strain remaining sauce. Put back on heat and reduce by half. Add cream to desired consistency. To cook place grouper in flour. Pat off excess. Dip into egg wash and then into bread crumb mixture. Place in 350 degree oil (med high pan) brown on both sides. One inch of fish will usually take about 10 minutes so judge accordingly. Ladle sauce onto plate, top with grouper Serve with rice and vegetables This is honestly worth the effort! Enjoy.
