1 c. good-quality all-vegetable shortening
1 c. sugar
1 tsp. baking powder
1 tsp. salt
1 c. unsulphered molasses (light or dark)
1 tsp. ground ginger
1 tsp. cinnamon
5 c. flour
4 Tbsp. water

Directions:
Directions:
Mix the first seven ingredients on medium speed until well blended. Switch mixer to low speed and add flour and water; continue to mix until dough forms. Roll directly onto cookie sheets and cut pattern pieces. Bake at 350º for 10-15 minutes. Smaller pieces may require much less baking time. Large pieces may require 20 minutes or more. When the sides begin to brown slightly, remove from the oven and cool, either on the pans or on wire racks. Wait until they have cooled completely to check for strength. If they are not crisp you may put them back in the oven a little longer.
