1 c. thinly sliced carrots
2 Tbsp. plus 1 c. water, divided
1 pkg (10 oz) frozen chopped broccoli
2 1/2 milk
1/4 c. all-purpose flour
2 tsp. chicken bouillon
1/2 tsp. salt
1/4 tsp. pepper
1 c. (4 oz) shredded cheddar cheese

In a 2-qt microwave safe dish, combine carrots, 2 Tbsp water. Cover and microwave on high for 3 minutes; stir. Cover and cook 3 minutes longer or until tender. Add broccoli. Cover and microwave for 3 minutes; stir. Cover and cook 1 1/2 - 2 minutes longer or until vegetables are tender; stir in milk. In a small bowl, combine the flour, bouillon, salt & pepper; stir in remaining water until smooth. Pour over broccoli mixture. Cover and microwave on high for 11 minutes, stirring every minute until mixture boils & thickens. Stir in cheese until melted.
