2 1/2 c. sugar
2/3 c. white corn syrup
2 egg whites
1 t. vanilla
Walnut, if desired

Directions:
Cook sugar, syrup and water together until mixture forms soft ball stage. (Use a candy thermometer or use a cup of cold water to judge stage). Stiffly beat egg whites and slowly pour one half the soft ball stage syrup into egg whites. BEAT CONSTANTLY. Mixture will get very thick. Cook the rest of the syrup to a hard ball stage. Keep mixing the first half syrup. Slowly add second hard ball mixture to the soft ball mixture; add vanilla and chopped walnuts. Continue to beat until it holds it's shape and holds ball shape on wax paper. Drop by teaspoonfuls on waxed paper.
