2 T. vegetable oil
2 lbs. stewing beef, cut into cubes
1 - 14 1/2 oz. low sodium beef broth
1 bay leaf
1 heaping capful Mrs. Dash garlic and herb
4 med. onions, cut into quarters
6-8 med. carrots, cut into thirds
2 large potatoes, peeled and cut into small pieces
1 c. frozen peas, optional

Directions:
Heat oil in a large saucepan. Add beef; brown on all sides. Add beef broth, bay leaf and Mrs. Dash seasoning. Cover and simmer 1 hour, stirring occasionally. Add onions, carrots and potatoes. Simmer for 30 minutes or until beef and vegetable are tender. Add peas to beef, cook an additional 10 minutes, remove bay leaf and serve hot.
