4 Russet (bakers) potatoes
1/2 cube butter
1/2 tsp. salt & pepper
1/2 tsp. garlic powder
1/2 tsp. dried dill weed & parsley
1/2 c. sour cream
1/2 c. milk or cream
1/2 c. grated cheddar cheese -divided
1 can water packed tuna- drained
1/2 c. grated Parmesan cheese - divided

preheat oven 375º

Bake potatoes till tender. Let cool to touch.

When they are cool enough to work with - split each one in half. Scoop out pulp - put into bowl.
Keep skins to repack potato mixture into.

Once you have pulp in bowl, smashup potato with smasher or fork. Add all the ingredients to the pulp - reserved 1/4 cup of each cheese for top of potatoes. Add milk gradually, only use enough to wet mixture to a creamier texture.

Scoop mixture back into skins, sprinkle remaining cheese on top. Place on cookie sheet. Re-bake in 375º oven until cheese is melted and lightly browned.

Serve as a meal, or side.

These will freeze well for reheating, if you wrap and seal well.
