5# Yukon gold potatoes, or any potato you like
8 oz. cream cheese, softened
8 oz. sour cream
1 stick butter
salt and pepper to taste
milk or half and half, enough for desired consistency

Directions:
Directions:
Peel and cut potatoes into cubes. Boil in salted water till fork tender. Drain. Add cream cheese, sour cream and butter and mash by hand. Add salt and pepper to taste. Add milk or half and half a little at a time till you reach desired consistency. Can use electric mixer to whip if desired. You can serve this way, or place mixture in 13 x 9 prepared pan, spray with non stick spray, then top with dots of butter and put under broiler for a few minutes watching closely.

You can also pipe onto cookie sheet lined with parchment to make individual size fancy looking servings! Cannot be a runny consistency!
