2 oz olive oil
2 oz shallots, minced
2 oz flour
2 oz cognac or brandy
6 oz beef stock
16 oz heavy cream
4 oz whole grain mustard
salt & pepper to taste

Directions:
Directions:
Heat olive oil and shallots over medium heat.
When shallots are tender or slightly brown, add flour, stir in cognac.
Add beef stock and heavy cream.
When sauce is thickened slightly, add mustard.
Simmer 10 minutes.
Serve on top of your favorite steak (NY Strip) that has been lightly coated on both sides with ground or cracked peppercorns.and grilled to your desired doneness.
