1 1/2 -2 lbs. Whitefish (cod,haddock)

butter for dish

2 tbsp. Olive Oil

1 can Rotel Diced Tomatoes w/green chiles

1 small can sliced black olives

Salt and Pepper to season fish

Directions:

Pre-heat oven to 375º

Place fish filets in a buttered 9x13, or 8x11 pan, skin side up.

Season lightly with salt and pepper.

Pour can of Tomatoes over fish, sprinkle with black olives.

Drizzle with Olive Oil.

Cover with foil, bake 35-40 minutes.

Dad taught me how to make this in Florida, he and Dee loved it.

At times I have also layered thinly sliced, par-boiled potatoes and a sliced onion under the fish. The potatoes get a wonderful flavor. You may also sprinkle a little crumbled Feta on top before baking.
