1/2 recipe Slow Cooker Shredded Pork
16 corn tortillas, warmed
Garnishes:
2 c. 1/2 inch diced fresh pineapple
Fresh cilantro sprigs
Shredded red cabbage
Pickled red onions (1/3 c. lime juice, 1/3 c. sugar, 1/3 c. red wine vinegar, 1/2 med. red onion slice thin, 1 jalapeno, seeded and cut into rings)
Cotija cheese
Lime wedges
Guacamole

Directions:
Directions:
Pickled onion: heat ingredients(except onion) over med high heat about 2 min until sugar dissolved. Pour over slice onions in bowl. Cover with plastic wrap and let cool for 20 min. Discard liquid.

To assemble tacos:
Place pork into tortilla and top with pineapple, cilantro, cabbage, cheese, pickled onion and squeeze of lime. Season with salt if needed
