4 beef tenderloins (1/4-1/2" thick)
1 tsp. Worcestershire sauce
4 T. butter
1/4 tsp. salt
4 T. snipped chives
1/4 tsp. pepper
4 T. snipped parsley
1 tsp. Dijon mustard
1/2 c. dry vermouth
1/4 c. brandy

In a large chafing dish or electric frying pan, melt 2 T. butter. Add steaks and brown quickly, turning only once. Remove steaks to platter. Add remaining butter, chives, parsley, mustard, Worcestershire sauce, salt and pepper to skillet; bring to a light boil. Add vermouth to skillet; simmer, stirring occasionally for 2-3 minutes. Heat brandy in a small saucepan (do not boil). Return steaks to skillet. Pour heated brandy over steaks, and flame. Use caution; do not light brandy until you finish pouring it onto the steak. Otherwise, the flame can travel up the pouring brandy and ignite your arm! Serve as soon as the flame dies, spooning sauce over the steaks. Can be flamed at dinner table in candlelight for an elegant presentation.
