1-6 oz. pkg. instant home-style mashed potatoes
1 lb. ground beef
1 medium onion, chopped
1-14 1/2 oz. can diced tomatoes, undrained
1 can mexicorn
1 small can chopped black olives
1 pkg. taco seasoning
1 1/2 tsp. chili powder
1/2 tsp. salt
1/8 tsp. garlic powder
1 c. shredded cheddar cheese

Directions:
Prepare mashed potatoes. Cook beef and onion, drain. Add the tomatoes, mexicorn, olives, taco seasoning, chili powder, salt and garlic powder. Bring to a boil, stirring frequently. Transfer mixture to a greased 2 1/2 qt. baking dish, top with 3/4 c. of the cheese and mashed potatoes. Sprinkle remaining cheese on the top. Bake uncovered at 350º for 12 - 15 minutes. Serve with warm tortilla chips.
