6 small red potatoes
1 cup chopped carrots
4 chicken breasts
2 cans coconut milk
3 1/2 tbsp sugar
3 1/2 tbsp fish sauce
3 1/2 tbsp yellow curry paste (Mae Ploy brand is best!)

Directions:
Directions:
1. Boil chicken and vegetables until cooked through.
2. Simmer milk, sugar, fish sauce, and curry paste for about 30 minutes.
3. Pour sauce over chicken and vegetables, serve with rice.
