Ingredients:  
Flank steak-sliced into bite sized strips
Red and green peppers (sliced in long thin slices)
Garlic
Orange juice (just for flavor-not a lot)
Orange peel* zest (optional)
Soy sauce
Beef consommé (at least two cans)
Scallions –sliced
Oil – peanut not olive oil (it is too overpowering for this dish)

Directions:
Directions:
In pan brown flank steak with garlic. Remove steak.

Add soy sauce and consommé and orange juice, bring to boil and reduce. Add scallions and steak. Add peppers. Cover and simmer to tenderize steak. About 20 minutes. Serve over rice or spinach.

*add very little, if any salt to this dish. Both the consommé and soy sauce are very salty.
