1 1/2 c thinly sliced red bell pepper
1 1/2 c thinly sliced onion
1 lb skirt steak, thinly sliced
1 tbsp chili powder
1 tbsp lime juice
2 1/2 tsp olive oil
3/4 tsp salt
8 garlic cloves, minced
8 (6-inch) corn tortillas
3 tbsp fresh cilantro, chopped
6 tbsp light sour cream

Directions:
Directions:
Heat a grill pan over med-high heat. Coat pan with cooking spray. Add bell pepper and cook 4 minutes, add onion; saute 10 minutes or until veggies are tender. Place mixture in a large bowl; cover and keep warm.

Add beef to pan; cook 7 minutes. Add bell pepper mixture. Add chili powder, lime, oil, salt and garlic to bowl; toss to coat.

Heat tortillas according to package directions. Over a gas stove burner with tongs warming both sides is the best way.

Spoon evenly. Top each taco with cilantro and sour cream.

Serve with baked chips and salsa.

Note: I add the chili powder, garlic, lime and oil to meat as it cooks.
