2 lbs of ricotta cheese (best from an Italian foodmarket made for cannolis)
1 1/2 cups powdered sugar
4 tsp vanilla
1/2 cup citron or orange peel
1/2 cup semi-sweet chocolate, chopped

Optional:
1 cup heavy whipping cream
Green food coloring
Chopped blanched pistachios, garnish

Traditional Ricotta Filling:
Whirl ricotta cheese in the blender or press through a wire strainer until very smooth. Fold in unsifted powdered sugar and vanilla. Mix in citron finely chopped and semi-sweet chocolate. Chill several hours or overnight.

Fluffy Ricotta Filling:
Prepare 1/2 the Traditional recipe. Whip heavy whipping cream until stiff. Fold ricotta filling and whipped cream together. Chill.

Pistachio Filling:
To either recipe add a couple drops of green food coloring to tint pale green. Use the nuts for garnish.
