Cake:
1 c. flour
3/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1 3/4 c. graham crackers
1/2 c. shortening (margarine)
2 eggs
3/4 c. milk
1 3/4 c. graham cracker crumbs
1 tsp. vanilla

Mocha icing:
1/3 c. butter
4 1/2 c. sifted powdered sugar
1/2 c. unsweetened cocoa powder
1/4 c. milk
1 Tbsp. instant coffee crystals
1 1/2 tsp. vanilla

Directions:
Directions:
Sift flour, sugar, baking powder, salt. Combine graham cracker crumbs with it. Mix shortening in bowl, adding dry ingredients alternating with milk mixed with vanilla.
Mix until dampened. Beat 2 minutes with mixer. Add eggs and beat one more minute. Grease two 8" or 9" cake pans. Bake at 350º for 25 minutes. Put small piece of waxed paper in bottom of greased cake pans to prevent sticking. Let cool.

Icing:
In a bowl, beat butter until fluffy. Gradually add 2 c. powdered sugar and the cocoa. Add the instant coffee to the milk and let stand 3 minutes; stir well. Add this mixture to butter, sugar, and cocoa mixture. Slowly beat in remaining sugar. Beat in additional milk, if needed, to make of spreading consistency. Spread between layers and on top and sides.

My mom always made this cake for our birthday. It's so delicious and brings back great memories. If the mocha icing is too sweet, try it with real whipped cream instead (not Cool Whip). This was my brother Jim's favorite!
