3 c. carrots, grated

1/2 c. nuts, chopped

1 1/2 c. oil (I only use 1 cup.)

4 eggs

2 c. flour

2 tsp. baking soda

2 tsp. cinnamon

1 3/4 c. sugar

Directions:
Directions:
Combine carrots and nuts and set aside. Mix well together oil, eggs and sugar. Sift together flour, baking soda and cinnamon.

Mix well then add carrots and nuts. Makes 1 dripper pan size cake. Bake at 375º for 45 minutes. Cool. Decorate with cream cheese frosting.
