15 Lbs. Honey Comb Tripe (must be honey comb)
1 Bunch of Parsley
1 can Tomato Paste
Nutmeg
1 Lb Salt Pork
3 Medium onions
Approximate 2 quarts homemade beef soup
Large cloves of garlic to taste
5 lbs. red potatoes

Directions:
1. First bring Tripe to a boil and boil for 10 mins. Throw out water and cool Tripe. Cut into thin long like spaghetti strips and set aside.

2. Take garlic, Parsley, onions and Salt Pork. grind together. Then put into a large pot and simmer slowly until all melts down.

3. Add 1 Qt. of homemade soup add tripe and bring to boil. add just enough soup to cover (like when making spaghetti. add tomato paste, nutmeg and margarine.

Let simmer slowly about 2 to 3 hours, stirring often so it don't burn.

cut peeled potatoes and add last half hour (small pieces)

Add garlic to your liken. Gramma added several large cloves. This was a treat. She would make it for me every year on my birthday and give me many containers to freeze.
