1 (20oz) can pineapple chunks

3 T. soy sauce

1 T. cornstarch

1 tsp. white vinegar

1/4 tsp. hot red pepper flakes

1/2 lb. boneless chicken

1 T. vegetable oil

2 large cloves of garlic, pressed

1 T. ginger root, minced OR ground ginger

1 onion, cut into wedges

2 medium carrots, slivered

2 c. broccoli florets

1 green OR red bell pepper, slivered

4 servings rice

Directions:
Drain pineapple, reserving 3 T. juice. Mix reserved juice with 1/2 c. water, soy sauce, cornstarch, vinegar and pepper flakes. Set aside. Cut chicken into strips. In skillet, brown chicken in hot oil. Add garlic and ginger. Cook for 1 minute. Add onion, carrots and broccoli. Cook for 1 minute. Stir sauce, add to skillet with pineapple and bell pepper. Cook until sauce bubbles and thickens. Serve over rice.

Variation: Add remaining pineapple juice and let simmer until vegetables are done.
