1/4 c. olive oil
1/2 lb. bacon, sliced lengthwise, then cut crosswise into 1/4" pieces
1/2 c. dry white wine
3 large eggs
3/4 c. grated Parmesan cheese
1/4 c. Pecorino Romano, grate
3 small cloves garlc, pressed

1 lb. spagetti
salt
pepper

Adjust oven rack to lower-middle position and set a large heatproof serving bowl on rack. Heat oven to 200º. Bring 4 quarts water to a boil in a large Dutch oven or stockpot.
While water is heating, heat oil in large skillet over medium heat until shimmering but not smoking. Add bacon and cook, stirring until brown and crisp, about 8 minutes Add wine and cook about 6-8 minutes. Remove from heat and cover to keep warm.
Beat eggs. cheeses and garlic with a fork in small bowl. Set aside.

When water comes to a boil, add past and 1 tsp. salt. Stir to seperate pasta. Cook al dente. Reserve 1/3 c. pasta water. Drain pasta leaving slightly wet. Transfer to warm bowl. If pasta is dry add soem reserved pasta water and toss to moisten.
Immediately pour egg/cheese mixture over pasta. Stir to combine. Pour bacon mixture on and stir. Season with salt and corse black pepper.
