Chicken Marsala Recipe

1/2 c. flour
1 tsp. salt
1/2 tsp. black pepper
1 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
pinch of thyme and oregano and dash cayenne

2 (6-8 oz.) boneless, skinless chicken breast
cut in half and pounded thin
1-2 T. olive oil
4 T. butter
3 c. mushrooms-cremini, oyster, shitake
3/4 c. Marsala (don't use cooking wine)
1 c. chicken stock
chopped chives for garnish

Directions:
Directions:
In a shallow bowl or plate combine flour and seasonings. Combine. Dredge chicken in flour mixture, shaking off any excess flour.

Heat oil in large skillet over medium-high heat until hot but not smoking. Add 1 T. of the butter nd cook the breasts until golden on both sides , about 3 minutes per side. Transfer to a warm plate and set aside. Add 1 T. of butter to pan and add mushrooms. Cook, stirring frequently, until mushrooms aer golden brown around the edges. Add Marsala and bring to a boil scraping to remove any brown bits. When wine is reduced by half, add chicken stock and cook 3 more minutes or until the sauce has slightly thickened.
Lower heat to medium and return chicken to pan and continue to cooking until cooked through and sauce has thickened-about 5-6 minutes.
Swirl in remaining 2 T. butter, add salt and pepper to taste. Garnish with chives and serve.
