Pie Pumpkin
3 eggs
1 c. sugar
1/4 tsp. salt
1/4 tsp. cloves
1/4 tsp. allspice
1/4 tsp. ginger
1 tsp. cinnamon
1/2 c. milk
1/2 c. evaporated milk
unbaked pie shell

Directions:

Knock stem off pumpkin and pierce it several times with a fork. Place pumpkin on a cookie sheet and bake at 350º or 1 1/2 hrs or until soft. Cut in half. Scoop out and discard seeds and strings. Scoop out pulp and set aside.

In medium bowl combine eggs and sugar, then add salt, cloves, allspice, and ginger. Add 1 c. pumpkin pulp, cinnamon, milk and evaporated milk. Mix together. Pour into an unbaked pie shell. Bake at 400º for 15 minutes. then at 350º for 45 minutes or until knife inserted in the center comes out clean.
