1/2 lb. fresh Spinach
1/4 Onion diced (small)
1/2 Lime diced (small), include rind - no pips
1" piece of ginger, sliced thin
3 Tbsp. shredded unsweetened coconut
4 Tbsp. whole peanuts - roasted, unsalted

Lime Chutney
1 small Lime - seeded, cut into 8ths
1 Tbsp. coarsely chopped fresh Ginger
1/2 c. chopped onion
1/3 c. Honey
1/2 c. peanuts (roasted, unsalted)
1/4 c. shredded unsweetened coconut

Remove Spinach stems, clean leaves and chill until use.
Put the onion, lime, and ginger into separate bowls, cover and chill.
To make the Chutney
Combine the Chutney ingredients in a food processor fitted with a steel blade. Process until it acquires the consistency of a thick sauce.
Cover and refrigerate until serving time.

You can make these ahead but they take some time so easier to direct guests as to how to make their own.

To eat: Take a spinach leaf, place one piece of onion, lime, and ginger on the lower half of the leaf. Add a pinch of coconut and a peanut. Add a "delicate mound" of chutney to the top, roll up the leaf and eat in one.
