1/4 tsp. Sugar
1/2 tsp. Cumin
1/2 tsp. Garam Masala
3/4 tsp. Salt
1/2 tsp. Cayenne pepper
1 Tbsp. Tomato paste
3/4 c. heavy cream
1 Tbsp. fresh lemon juice
2 Tbsp. chopped fresh Cilantro
1 fresh hot green chili - finely chopped
3 Tbsp. vegetable oil
1/2 tsp. cumin seeds
1/2 tsp. black or yellow mustard seeds
20 oz. defrosted frozen peas (the smaller the better)

Combine the sugar, ground cumin, garam masala, salt, cayenne, and tomato paste. Slowly add 2 Tbsp. water, mixing as you go. Add the cream slowly and mix. Put the lemon juice, cilantro and green chili. Mix again and set this cream sauce aside.

Put the oil in a large frying pan and set over medium-high heat. When the oil is hot, put in the cumin seeds and mustard seeds. As soon as the mustard seeds begin to pop - about 30 seconds - put in the peas. Stir and fry the peas for 30 seconds. Put in the cream sauce. Cook on high heat for 2 minutes until the sauce has thickened, stirring gently.
