1 lb. boned shoulder of lamb or pork cut into 1" cubes
2 tsp. garam masala
1 tsp. ground cumin

1/2 tsp. salt
fresh ground pepper
2 tsp. fresh lemon juice

Directions:
Directions:
Put the oil in large casserole and set over medium-high heat. When oil is hot, add ginger, garlic and curry leaves. Stir. When garlic starts to turn brown, add the meat. Stir once or twice, then turn the heat to medium low. Add the garam masala, cumin, turmeric, cayenne pepper, green chili, and salt. Stir to mix. Add 2 Tbsp. of water, cover tightly and simmer for 90 minutes. Remove the cover and and turn up the heat to remove most of the liquid, letting the meat brown a little. Stir in fresh ground pepper and lemon juice.
