6 tbsp brown sugar
4 tbsp ground cumin
4 tbsp paprika
4 tbsp kosher salt
2 tbsp black pepper
2 tbsp chili powder
1 tsp cayenne pepper
1 tsp mace or nutmeg

Combine all ingredients.
Rub on rinsed whole chicken.
Wrap chicken in plastic wrap and refrigerate over night.
Roast on grill, smoker or in oven.
