1 pair shad roe lobes
6 Tbsp butter
1/2 small tomato seeded and chopped
1 glove garlic, minced
1/2 tsp kosher salt
juice of 1/2 lemon
1 Tbsp capers, rinsed and dried

Directions:
Directions:
Preheat oven to 350º.

Melt butter over medium low heat in an oven safe 6-8 inch saute pan. Stir in tomato and garlic and remove from heat.

Gently wash roe lobes and, with a sharp knife, remove tissue connecting lobes, being careful to keep membrane intact.

Add shad roe lobes to saute pan and spoon butter over top. Scatter salt over top.

Bake 10-12 minutes until lobes feel firm to the touch but still have some give, like a ripe avocado.

Add capers and drizzle with the fresh lemon juice.
