1 lb bonesless meaty spareribs
2 tsp soya sauce
2 tsp rice wine or dry sherry
1 tsp salt
1 tsp sesame oil
2 tsp cornstarch
12 oz peanut oil
2 tbsp finely chopped garlic
1 tsp salt
2 tsp roasted grnd szechuan peppercorns
3-4 c oil for deep frying
2 tbsp oil for stir frying

Cube the pork and place in a bowl. Add the first 4 ingredients mixing well, add cornstarch last. Marinate the pork for about 15 minutes. Heat oil, slide pork into oil Deep fry until golden, about 10 minutes. Remover and drain. Heat wok add oil and garlic, stir fry until aromatic, add peppercorns, salt, 5 spice powder and chili powder Add pork and stir fry 2-3 minutes. Serve hot
