1 c shortening
1 c sugar
3 egg yolks
2 c cake flour
3 tsp baking powder
½ tsp salt
½ tsp vanilla
2/3 c milk
3 egg whites
1 ½ c brown sugar
4 c rhubarb chopped

Directions:
Directions:
In bottom of cake pan sprinkle 1½ c brown sugar evenly, top with rhubarb.

In large bowl cream shortening, sugar and eggs. Add flour, baking powder, salt, milk and vanilla. Mix til blended. In seperate bowl, beat egg whites until stiff, fold into creamed mixture Pour over rhubarb. Bake at 350º for 45 minutes.
