5 sticks celery chopped
2 lg onions chopped or sliced
1 lb. mushroom slices
parsley any amount chopped
3 lb. red snapper (can use orange ruffy or other white fish)
Oil and flour for frying
1 can whole tomatoes (lg)

Directions:
Directions:
Pan fry the fish and set aside. In another pan, brown onion celery, mushrooms and parsley. Add salt, pepper and garlic, cook until tender with about 1 cup of water covered, over med. heat.
In a lg. casserole, mix fish and veggies, top with whole tomatoes. Cook in the oven about 25 min. @ 350.
Serve hot over rice.

This is a hearty fish casserole and will feed quite a few. The original recipe also had a pound or so of shrimp, but I leave this out since I am allergic.
