1 lb. catfish fillets
1/2 c. instant potato flakes
1/2 tsp. seasoned salt
1/8 tsp. black pepper
3 beaten egg

Directions:
Directions:
In a shallow dish, combine potato flakes, salt & pepper. dip catfish in beaten egg and coat with flakey mixture. Place in a large non-stick skillet coated generously with cooking spray. Cook over medium heat until fillets are golden brown (about 10 minutes). Then spray the uncooked side with the cooking oil spray and cook about 10 minutes more. Turn only once during cooking.
