1 large lemon
4 eggs
1 stick melted butter
1 tsp. vanilla
1 - 1/2 c sugar
1 unbaked pie crust
Directions:
Directions:
Cut lemon (including peel) into small chunks. Take out seeds. Put into blender and add 4 eggs, butter, sugar and vanilla. Blend well. When smooth pour into unbaked pie crust. Bake 40 minutes at 350º.
Let cool.

I got this recipe from a friend in AZ who cut it out of the newspaper. Easy to make and delicious. Top with cool whip or whipped cream.
