3 cups water
1 cup milk
1 stick butter or margarine
2 well beaten eggs
1 tsp salt
6-8 drops Tabasco
10 oz cheddar cheese, grated
1 cup Quick Grits ( not Instant)
7 oz can Ortega diced green chilies

Directions:
Directions:
Stir grits into the boiling water/milk and cook until thick, about 5 min. Turn fire off- let kettle sit on burner. Add the eggs, the salt, the Tobasco, the chilies and the grated cheese. Mix well and pour into a well buttered casserole. Bake at 300º
uncovered for one hr.
